Grandmother's Molasses Cookies
Grandmother's Molasses Cookies
From Lizzie Hunter for the Clinton Historical Society Bi-centennial Cookbook
Ingredients
1 c. sugar
1 c. molasses (I use the robust dark)
1 c. oil (for less saturated oils, use Canola)
1 egg
2 Tbsp. vinegar (cider or white)
4 1/2 c. flour
4 tsp. soda
1 tsp. cream of tartar
2 tsp. ginger
3 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla extract
Blend the first 5 ingredients together. Sift the remaining dry ingredients together, add, and blend well. Cover and let set for several hours or overnight.
Preheat oven to 375 degrees. Roll into walnut-sized balls. Place on cookie sheet and press them down with a fork in a criss-cross pattern. Bake about 10 minutes or until done. (Don't overbake them.)
Should make about four dozen cookies.
