Cooking times for Meat and Poultry

Grilling Times for Chicken and Poultry

Chicken and Poultry Cut Method Heat Time Internal Temp. (minimum)

Whole Broiler or Fryer
3 to 4 pounds Indirect Medium 60 to 75 min. 180 F (80 C)

Whole Roasting Hen
5 to 7 pounds Indirect Medium 18 to 25 min./pound 180 F (80 C)

Capon
4 to 8 pounds Indirect Medium 15 to 20 min./pound 180 F (80 C)

Cornish Hens
18-24 ounces Indirect Medium 45 to 55 min./side 180 F (80 C)

Breast
6 to 8 ounces Direct Medium /High 10 to 15 min./side 180 F (80 C)

Boneless Breast
4 ounces Direct High 6 to 8 min./side 180 F (80 C)

Legs or Thighs
4 to 8 ounces Direct Medium /High 10 to 15 min./side 180 F (80 C)

Drumsticks
4 ounces Direct Medium /High 8 to 12 min./side 180 F (80 C)

Wings
2 to 3 ounces Direct Medium /High 8 to 12 min./side 180 F (80 C)


Cooking times for Fresh or Thawed Turkey at 325°F.

These times are approximate and should always be used in conjunction with a properly placed thermometer.

Unstuffed
8 to 12 pounds 2 3/4 to 3 hours
12 to 14 pounds 3 to 3 3/4 hours
14 to 18 pounds 3 3/4 to 4 1/4 hours
18 to 20 pounds 4 1/4 to 4 1/2 hours
20 to 24 pounds 4 1/2 to 5 hours

Stuffed
8 to 12 pounds 3 to 3 1/2 hours
12 to 14 pounds 3 1/2 to 4 hours
14 to 18 pounds 4 to 4 1/4 hours
18 to 20 pounds 4 1/4 to 4 3/4 hours
20 to 24 pounds 4 3/4 to 5 1/4 hours

The USDA does not recommend cooking turkey in an oven set lower than 325°F.



Roast Beef

Oven temperature : 220ºC/Gas Mark 7 for first 15 minutes then reduce to 190ºC/Gas Mark 5 for the rest of the cooking time.
Allow 20 minutes per 450g/1lb plus 20 minutes for rare.
Allow 25 minutes per 450g/1lb plus 20 minutes for medium or 30 minutes per 450g/1lb for well done for a boned and rolled joint.



Roast Pork

Oven temperature : 220ºC/Gas Mark 7.
Allow 30 minutes per 450g/1lb plus 30 minutes for medium or 35 minutes per 450g/1lb plus 30 minutes for well done.
To crisp the crackling remove from the joint 10 minutes before the end of the cooking time and place udner a preheated grill.



Roast lamb

Oven temperature : 180ºC/Gas Mark 4.
Allow 25 minutes per 450g/1lb plus 25 minutes for medium or 30 minutes per 450g/1lb plus 30 minutes for well done or for a boned and rolled joint.



Boned and Rolled Joint of Pork

Oven temperature : 190ºC/Gas Mark 5.
Allow 35 minutes per 450g/1lb plus 35 minutes.
